Cinnamon Oat Raisin Nut Protein Bars

I've lost my ever-loving mind with these nut protein bars because here's another one and I have two more that I'm going to fiddle with soon. This on tastes a lot and I do mean a lot like an oatmeal raisin cookie. (I can't imagine how that happened). I created this recipe with my sister Lisa in mind because she is the bit oatmeal in the morning person. (I'm bacon and eggs). Regardless of which one you are, I hope you enjoy this bar.




Ingredients:

1 cup, whole almonds

½ cup peanuts

¼ cup sunflower seeds

¼ cup old fashioned oats

1 scoop Body Tech Whey Protein Isolate,

unflavored

¼ cup sugar free pancake syrup

⅓ cup Erythritol

½ tsp cinnamon

¼ tsp salt

¼ tsp liquid stevia

1 snack box of raisins (1.5oz)


Directions:

1) Toast nuts and oats in the oven until fragrant. In a bowl mix protein powder, erythritol, syrup, cinnamon, salt and stevia until smooth and liquidly; will be thick at first. Pour hot nuts/oats into bowl and mix until well coated and completely combined. Stir in raisins.


2) Set oven to 325 F. Place a piece of parchment paper across one direction in an 8x8” baking pan to create a sling. Pour mixture into pan, pack down firmly until even on top. Bake for 10 to 15 min.


3) Cool completely, at least 1 hour. Cut into 5 slices then cut each slice in half. Wrap in foil and store in fridge or freezer.
