Chocolate Nut Protein Bars

I love the convenience of protein bars, but most are either too sweet, have too many carbs, not enough protein or just don't taste good. So what's a low carb chick to do but make her own. I love the combination of nuts and chocolate. Okay, to be honest, I love anything with chocolate. But I digress, I had a nut protein bar recipe (will post later) and fussed around with it until I created a chocolatey, unctuous protein bar that's not too sweet and has less than 8g carbs and at least 10g protein. I love it and I hope you do too.



Ingredients:

1 cup, whole almonds

½ cup peanuts

¼ cup sunflower seeds

2 scoops Body Tech Whey Protein Isolate, Rich Chocolate

⅓ cup Erythritol

¼ cup sugar free pancake syrup

4 tbsp cocoa powder, unsweetened

1 pinch salt

½ tsp liquid stevia

3 Tbsp 60% cocoa bittersweet chocolate chips


Directions:

1) Toast nuts in the oven until fragrant at 400° F.


2) While nuts toast mix protein powder, erythritol, syrup, cocoa powder, salt and stevia in a bowl until smooth and liquidly; will be very thick at first. Pour hot nuts into bowl and mix until well coated and completely combined. Stir in chips.


3) Set oven to 325° F. Place a piece of parchment paper across one direction in an 8x8” baking pan to create a sling. Pour mixture into pan, pack down firmly until even on top. Bake for 10 to 15 min.


4) Remove from pan with the sling and place on cooling rack. Cool completely, at least 1 hour. Cut into 5 slices then cut each slice in half. Wrap in foil and store in fridge or freezer. Grab and go at will.
