I love cookies. They're a little bit of something sweet without the commitment of a slice of cake or pie. If you want a little, just eat one; if you want more, then you just eat a couple more. I'm so in love with freeze dried strawberries ever since I bought a bag at my local Dollar Tree. These sweet crunchy treats make you feel like you're eating candy, but you're not! The .71oz bag is the perfect size for these cookies. Plus, if you want a different taste, just change the fruit. Try it with freeze dried peaches or apples. Totally yum.

Ingredients:
2 cups almond flour
⅓ cup Erythritol
¼ tsp salt
1 tsp vanilla extract
½ cup softened unsalted butter
1 large egg, beaten
1 Tbsp lemon juice
1 scoop vanilla protein powder
1 bag freeze dried strawberries
Directions:
1) Preheat oven to 300° F. Mix flour, erythritol, salt, protein powder and vanilla in your mixing bowl. Add the butter and mix until fully combined.
2) Add the egg and lemon juice and mix well. Using a serrated knife, dice strawberries into chip size pieces. Keep the crumbs and put them into a small pile to the side. Fold strawberry pieces into dough by hand.
3) Using a tablespoon sized scoop or spoon; scoop mixture into your hand and roll into balls. Dip one side of ball in crumbs and place crumb side up on cookie sheet. Using the bottom of a glass press onto a parchment lined or buttered cookie sheet to about ½” high. Leave a small gap between the cookies, they will spread a tiny bit.
4) Bake for 20-25 minutes, rotating half way through, until the edges are lightly browned. Remove from oven and cool on a rack; the cookies will firm up as they cool. Store in an airtight container and enjoy.
